Moroccan Msemen is a delicious and versatile flatbread that is a popular breakfast and snack food in Morocco. It’s similar to a pancake, but with a flaky, layered texture that makes it perfect for dipping or filling with your favorite ingredients. Here’s a recipe for you to try:
Ingredients:
- 2 cups all-purpose flour
- 1 cup fine semolina flour
- 1/2 teaspoon salt
- 1/2 teaspoon sugar
- 1/2 teaspoon baking powder
- 1 1/2 cups warm water
- 1/4 cup vegetable oil
- Butter or oil, for cooking
Instructions:
- In a large mixing bowl, whisk together the flour, semolina flour, salt, sugar, and baking powder.
- Slowly add the warm water to the dry ingredients, stirring with a wooden spoon or your hands, until you have a soft, smooth dough. Knead the dough for 5-10 minutes until it is smooth and elastic.
- Divide the dough into small balls, about the size of a golf ball. Cover the balls with a damp towel and let them rest for 15-20 minutes.
- Lightly oil your hands and work surface. Take one ball of dough and flatten it with your hands into a thin, rectangular shape, about 1/8-inch thick. Brush the surface of the dough with vegetable oil.
- Fold one-third of the dough over the center, then fold the other side over to create a three-layered rectangle. Repeat this process with the remaining balls of dough.
- Heat a large non-stick pan or griddle over medium-high heat. Add a tablespoon of butter or oil to the pan.
- Cook the msemen, one at a time, for 2-3 minutes on each side until golden brown and crispy. Repeat with the remaining msemen, adding more butter or oil to the pan as needed.
How to serve:
Serve the msemen hot with honey, jam, cheese, or your favorite filling.
Tips:
- If the dough is too sticky, add a little bit of flour until it becomes easier to work with.
- You can store the cooked msemen in an airtight container in the fridge for a few days, and reheat them in the microwave or oven before serving.
- You can also freeze the msemen for later use. Just make sure to separate each layer with wax paper before freezing.
